Tempeh Tacos

Tacos are one of my FAVORITE meals! There are so many ways to create a plant based taco and this is one of them.
For this recipe I used the Wegmans brand of Tempeh but you can use
any brand you have.

1. Crumble your tempeh. You can use a cheese grate or simply break it apart with your hands.
2. Heat up 2-3 tbsp. of oil in your sauté pan and add in chopped onion (however much you want). I usually add garlic in there as well but I was out so go ahead and throw in a gob of garlic too.
3. Add in your crumbled tempeh after you let your onions cook for a minute or two
4. I let this sauté for about 5-7 minutes or so on medium heat- once the pieces start to get that golden brown color. I'm honestly guessing on the time because I actually never pay attention to that part.
5. To help keep moisture in the pan so the tempeh doesn't start sticking, I'll add a top to the saute pan. This is optional. You can always add a little more oil or even a little water if it's sticking a lot.
6. Once it's golden brown you can add your taco seasoning. If you have your own seasoning, great. If you want a recipe for homemade seasoning, pinterest has a ton. I wing it. I use chili powder, cumin, and red pepper. I just throw it on there and add more seasoning as needed. I made my own seasoning before but I went through it so fast and I got sick of making it so that's why I wing it.
7. Mix the seasoning with the tempeh and let it sit for a minute or two to absorb nicely.
8. Get your taco toppings together- whatever you like! Pictured is diced lettuce, cherry tomatoes, and guacamole. Also- these taco bowls from old el paso are so fun!
9. Now go ahead and make your taco! I added a bed of lettuce into my taco bowl first, topped with tempeh and added the toppings.
There's really no wrong way to make a taco. What's great about tempeh is it's versatile and really takes on any flavor. It can easily be made into any dish you'd typically have with ground beef or chicken. It's the flavoring that's important!
