Buffalo Tempeh Salad

This Buffalo marinated tempeh from Lightlife is new to shelves at my Wegman's and I couldn't be more excited! And this Buffalo Tempeh Salad has become a regular at dinner. It's super simple to throw together and you can make it your own with your favorite salad toppings!

1. Cut your tempeh in whichever way you want: strips, chucky cubes, small cubes, however. I like smaller cubes.
2. Add about a tbsp. of oil (your choice) into a sauté pan at medium heat.
3. Add tempeh and let cook for about 5-7 minutes until it gets golden brown. Time to cook will depend on your stove top and amount of heat used.
4. Prep your salad to your liking. Pictured here is romaine lettuce, chopped, red onion and cherry tomatoes.
5. I like to heat up my buffalo sauce with a little butter. I wing this part. I add some of my Wegmans Buffalo sauce with a tbsp. or 2 of butter.
6. Once Tempeh is cooked to your liking, place your lettuce in a bowl, top with tempeh, drizzle over your warm buffalo sauce, and top with your salad toppings.
7. Now dig in!
